Banana Crumb Muffins
Ingredients
1½ cups all-purpose flour
1 teaspoon baking soda
1 teaspoon baking powder
½ teaspoon salt
3 bananas, mashed
¾ cup white sugar
1 egg,
lightly beaten
1/3 cup butter,
melted
½ tsp
vegetable oil
1/3
cup packed brown sugar
2
tablespoons all-purpose flour
⅛
teaspoon ground cinnamon
⅛ stick cold
butter
How to Bake
1. Line
12 muffin cups with muffin papers.
2. In a
large bowl, mix together 1½ cups flour, baking soda, baking powder and
salt. In another bowl,
beat together bananas, sugar, egg, vegetable oil, and
melted butter. Stir the banana mixture into the flour mixture
just until
moistened. Spoon batter into prepared
muffin cups. Set aside.
2. To
make the topping, in a small bowl, mix together brown sugar, 2 tbsp flour
and cinnamon.
Cut in 1 tbsp butter until mixture resembles coarse
cornmeal.
3.
Preheat turbo broiler to 175°C.
4. Sprinkle
topping over muffins.
5. Bake
in turbo broiler for 11 minutes or until a toothpick inserted into center of
a muffin comes out
clean.

Banana Cupcakes
Ingredients
2 medium ripe bananas, peeled
1¼ cups all purpose flour
¼ teaspoon salt
1½ teaspoons baking powder
1½ teaspoons vanilla extract
¾ cup brown sugar
½ cup butter, room temperature
1 large egg
¼ cup semi-sweet chocolate chips (optional)
How to
Bake
1. Whisk flour, baking powder, and salt in
medium bowl to blend.
2. Mash bananas with fork in another medium
bowl until smooth.
3. Using electric mixer, beat egg, sugar and
butter in large bowl
until light
and fluffy, about 3 minutes, then add vanilla extract.
4. Add all dry ingredients in the egg mixture
until smooth then add
mashed
banana and mix completely.
5. Add the semi-sweet chocolate chips in the
batter if using one.
6. Preheat turbo broiler to 175°C.
7. Divide batter among muffin cups with
paper liners about 3/4 full.
8. Bake cupcakes for 15 minutes or until tester
inserted into center comes
out clean.
9. Transfer the banana cupcakes to cooling rack and let cool completely.
