Bacon Cheddar Muffins

Ingredients
1¾ cups all purpose flour
½ cup sugar 
1 tbsp baking powder
½ tsp salt
2/3 cup milk, room temperature
1/3 cup butter, melted
1 tsp vegetable oil 
2 eggs
6 strips bacon cooked and chopped
¾ cup coarsely grated cheddar cheese

How to Bake
1. Bake bacon until crisp. Let cool and chop into pieces. 
2. In small bowl, combine 1 tbsp of the chopped bacon and 2 tbsp of cheddar
    cheese. Set aside.
3. In a large bowl, sift flour, salt and baking powder.  Add sugar and remaining 
    bacon and cheese. Mix.
4. In a separate bowl, combine egg, milk, melted butter and vegetable oil.
5. Pour the wet ingredients to the flour mixture and stir until 
moistened but do not
    over mix.
6. Preheat turbo broiler to 165°C.
7. Spoon batter to muffin tins. Sprinkle reserved bacon and cheddar mixture on
    top.
8. Bake for 10 minutes or until tops are firm to the touch.

Cheese Cupcakes


Ingredients
½ cup butter, softened
½ cup refined sugar
4 medium eggs
1 cup cheddar cheese, shredded
Dry Ingredients
2½ cups all-purpose flour
1 teaspoon baking powder
¼ teaspoon salt
Wet Ingredients
2 cans condensed milk
½ cup vegetable Oil

How to Bake
1. In a bowl, mix together the dry ingredients and sift. In another bowl, mix 
    together the wet ingredients. Set aside.
2. Cream butter with sugar until light in color. Add the eggs one at a time.
3. Add alternately the dry and wet ingredients to the butter-sugar mixture. Do not
    over beat.
4. Stir in ½ cup of the cheddar cheese.
5. Preheat turbo broiler at 165°C.
6. Using an ice cream scoop, portion the batter among lined cupcake pans and 
    top each with sprinkles of remaining cheese.
7. Bake for 16 minutes or after a toothpick inserted at the center comes out 
    clean.
